We lobbed into Darwin, hot wind blowin’,

Esky packed, plans already flowin’.

Red Mullet grinnin’, “Right boys, no fear,

We’re gunna make the Territory pay for our beer.”

Matt Wright’s camp — airboats and thunder,

Rain belting down, the sort that makes you wonder.

Croc eyes shining, beers goin’ missing,

Nelson laughing, “Bloody hell, this ain’t fishing!”

Dundee Beach, Red’s dusty domain,

Side-by-sides flying through salt and rain.

Then the chopper spun up, straight off the pad,

Andy gripping tight, swearin’ like mad.

Finniss River Station, Pete led the show,

Magpie geese thicker than flies at a rodeo.

Swamp crocs smiling, the wetlands wide,

Lux setup, cold tins, pure pride.

Then Tipperary Station, last stop on the trail,

Flash compound, more class than ale.

Down to Daly Crossing for a late-arvo crack,

Lines out, no bites, “Reckon barra’s slack.”

BBQ Boat, yeah right, not today,

No BBQ, no fish, dead halfway.

Craigo kicked the motor — one magic whack,

“She’s right boys,” he yelled, “We’re headed back!”

Rain hit hard on the homeward run,

1A gate duty — no bloody fun.

Only two gates, but wet to his bones,

Red laughin’ so hard he near lost control.

Pulled up back home, trip nearly through,

Good feed, good laughs, cold tins too.

Then Big Red, one last proud manoeuvre,

Backs into a mango — window in ruins.

I stood there howlin’, beer mid-flight,

Perfect ending to a cracker night.

No fish, no shame, just NT dirt,

Legends forever — ya pack of jerks!

Exciting new upgrades at Skippers at Dundee Beachfront Accommodation

We are thrilled to share the completion of major infrastructure projects at Skippers. Twelve months in the planning and achieving another milestone in staged venue improvements, Skippers has made the switch to solar energy. This shift has been on the agenda for many years as a wish list project. With the help of the NT government grant scheme for which we are very appreciative and together with careful budgeting, this sustainability upgrade demonstrates our commitment to offering a quality experience, affordably priced while minimising our carbon footprint.

What this means for our guests

The move to solar power will help future proof against rising electricity costs enabling us to maintain our high standards without elevating costs to guests. Another fantastic benefit to guests is that the solar energy installation will negate the effects of power outages sometimes more prone to occur in regional areas. In other words … lights, ac’s and water stay on!

What this shows about us

A major undertaking, the switch to solar demonstrates our commitment to environmental considerations and to visitors seeking sustainability. Further, it is anticipated that this solar energy solution will provide our guests with a more seamless, accommodation experience. It’s exciting for us to continue to offer unique, iconic Territory experiences that are also attainable and affordable.

Understandably, visitors are keen to explore regions like Dundee Beach given their beauty and tranquillity. However, there’s an increasing awareness around preserving and protecting the natural beauty - the very attributes that draw people to this pocket of paradise. This is the challenge for us all – how to experience the magic of these places while treading more lightly and reducing our carbon footprint. Our move to solar energy is a move in the right directions. We are conscious visitors want to choose operators who demonstrate a commitment to environmentally friendly practices.

Solar Power by Ecotech Electrical

We worked closely with Adam from Ecotech to investigate and select the system requirements best suited to our circumstances, power use and location. Adam’s experience and knowledge of solar components and compliance has informed and guided the entire process. We are excited about what this installation means for our guests and service delivery. With fluctuations in power supply not uncommon to regional locations we anticipate that solar will even out any outages, seamlessly delivering ongoing power supply to the premises.

New Venue Lighting

And we haven’t just been busy with solar! Since Skippers was unavailable for bookings during the installation we took advantage of this time to improve outdoor lighting for both aesthetic appeal and practical purposes. With the Ecotech team already on site it made perfect sense to illuminate carpark and front-of-property areas. Cheerful, festoon lighting not only complements the venue, their twinkling glow welcomes and guides visitors back to Skippers of an evening. Together with this decorative lighting we have added to existing carpark and driveway lighting making it easier for guests to navigate an evening arrival.

Guest Room Upgrades

We topped off the to-do list by upgrading our guest rooms with 5 brand new queen beds for even more comfortable, restful nights by the seaside. With fresh, new linen to complete the ensembles we are delighted to share that Skippers now offers 6 queen rooms – including 1 Superior Queen room – and 4 king single rooms. The room name indicates the bed size with our king singles remaining popular for solo travellers and fishing fanatics on charters with their mates.

Since our beginnings in 2017, improvements and enhancements have characterised the Skippers at Dundee experience. This recent investment in exciting new upgrades demonstrates our commitment to the region, to offering an environmentally conscious accommodation option and to encouraging visitors to experience the magic of the Top End.

Are there crocodiles nearby?

Yes, the NT is home to the world’s largest wild crocodile population. That means you can go croc spotting (with Skippers Nature Cruise) and see one of nature’s most magnificent predators, up close. Be sure to observe the signs and follow the guidelines for your safety and for the safety of others.

Can we swim at the beach?

We don’t advise it (see ‘crocodiles’ above). In fact, for your health and safety, we strongly advise against it. That’s why we have a pool so you can enjoy a cooling swim and the view at the same time!

What should we bring with us?

Hats, sunglasses, sunscreen, insect repellent and a few light, long-sleeve, cotton shirts are recommended. The Dundee Beach Tavern sells fuel, drinks, bistro and take-away meals, ice and a small range of essential grocery items from sun-up to sun-down 7 days per week.

Can we bring our pets?

Sorry, but no. This is a pet-free zone in consideration of all our guests. We want to protect the local wildlife—and your pets too.

Is mobile phone reception available?

Dundee Beach has coverage for Telstra providers only.

Can we recycle our bottles and cans?

Please do! Place glass (carefully to avoid breakage) plastic bottles and cans into the recycling bin.

An Aussie Night Before Christmas

'Twas the night before Christmas; there wasn't a sound.

Not a possum was stirring; no-one was around.

We'd left on the table some tucker and beer,

Hoping that Santa Claus soon would be here;

We children were snuggled up safe in our beds,

While dreams of pavlova danced 'round in our heads;

And Mum in her nightie, and Dad in his shorts,

Had just settled down to watch TV sports.

When outside the house a mad ruckus arose;

Loud squeaking and banging woke us from our doze.

We ran to the screen door, peeked cautiously out,

snuck onto the deck, then let out a shout.

Guess what had woken us up from our snooze,

But a rusty old Ute pulled by eight mighty 'roos.

The cheerful man driving was giggling with glee,

And we both knew at once who this plump bloke must be.

Now, I'm telling the truth it's all dinki-di,

Those eight kangaroos fairly soared through the sky.

Santa leaned out the window to pull at the reins,

And encouraged the 'roos, by calling their names.

'Now, Kylie! Now, Kirsty! Now, Shazza and Shane!

On Kipper! On, Skipper! On, Bazza and Wayne!

Park up on that water tank. Grab a quick drink,

I'll scoot down the gum tree. Be back in a wink!'

So up to the tank those eight kangaroos flew,

With the Ute full of toys, and Santa Claus too.

He slid down the gum tree and jumped to the ground,

Then in through the window he sprang with a bound.

He had bright sunburned cheeks and a milky white beard.

A jolly old joker was how he appeared.

He wore red stubby shorts and old thongs on his feet,

And a hat of deep crimson as shade from the heat.

His eyes - bright as opals - Oh! How they twinkled!

And, like a goanna, his skin was quite wrinkled!

His shirt was stretched over a round bulging belly

Which shook when he moved, like a plate full of jelly.

A fat stack of prezzies he flung from his back,

And he looked like a swaggie unfastening his pack.

He spoke not a word, but bent down on one knee,

To position our goodies beneath the yule tree.

Surfboard and footy-ball shapes for us two.

And for Dad, tongs to use on the new barbeque.

A mysterious package he left for our Mum,

Then he turned and he winked and he held up his thumb;

He strolled out on deck and his 'roos came on cue;

Flung his sack in the back and prepared to shoot through.

He bellowed out loud as they swooped past the gates -

MERRY CHRISTMAS to all, and goodonya, MATES!'

The Year Santa Didn’t Make it to Darwin

The Devastation of Cyclone Tracy: A Christmas Eve Catastrophe

This year marks the 50 ^th anniversary of Cyclone Tracy. Unleashing a wave of destruction, Cyclone Tracy struck Darwin in the Northern Territory on Christmas Eve 1974 forever altering the city and its residents. With winds reaching an astonishing 250 km/h (155 mph), the cyclone is remembered as one of the most catastrophic natural disasters in Australian history.

The Prelude to Destruction

As the cyclone approached, many residents of Darwin were unaware of the impending danger. The Bureau of Meteorology had warned of a developing storm, but the true ferocity of Cyclone Tracy was underestimated. In the early hours of December 25, the cyclone made landfall, wreaking havoc across the city. Tracy was classified as a category 4 cyclone leading to widespread devastation.

The impact was immediate and overwhelming. “It was like the world was coming to an end,” recalled local resident Margaret Dwyer. “I’ve never experienced anything like it. The noise was deafening, and the house shook as if it was going to lift off the ground.” Many homes were not built to withstand such powerful winds, resulting in extensive damage. Approximately 70% of Darwin's buildings were destroyed or severely damaged.

Human Toll and Statistics

The human cost was staggering. Cyclone Tracy claimed the lives of 66 people and injured over 600 others. More than 30,000 residents were displaced and around 10,000 people were left homeless. The aftermath was a scene of chaos and despair, as survivors emerged to find their homes reduced to rubble. “We walked outside and it was like a war zone,” said local resident John Reid. “There was nothing left but debris and devastation.”

The response to the disaster was immediate but challenging. Emergency services were overwhelmed, and the Australian government mobilized resources to assist the affected population. The scale of the destruction required a massive rebuilding effort, with the government allocating significant funds for recovery and reconstruction. Over the next few years, Darwin would be rebuilt, but the scars of Tracy would remain etched in the memory of its residents.

Long-term Impact on Darwin

The effects of Cyclone Tracy were not just physical; they changed the very fabric of Darwin’s community. Many residents were forced to rethink their living arrangements, and a significant number chose to leave the city for good. “We packed our bags and left the next day,” said Dwyer. “We just couldn’t stay there after what we’d seen.”

The cyclone also prompted a re-evaluation of building codes and emergency preparedness across Australia. In its wake, stricter regulations were implemented to ensure that future constructions could withstand such extreme weather events. “Tracy taught us a harsh lesson about resilience,” noted urban planner Dr. Andrew Wilkins. “It’s a tragedy that has shaped how we approach safety in our cities.”

A Legacy of Resilience

As the years passed, Darwin slowly rebuilt and transformed into a city marked by resilience and strength. Cyclone Tracy remains a significant chapter in its history—a reminder of nature's power and the indomitable spirit of the community. “We learned to come together and support one another,” Reid reflected. “In the end, that’s what made us stronger.”

The fishing here is world-class, attracting anglers from across Australia and beyond. But while the fishing is undoubtedly a major drawcard, there's so much more to discover in this tropical hideaway at Dundee Beach.

One way to experience the best of Dundee Beach is with Skippers at Dundee Beachfront Sanctuary. This charming beachfront accommodation offers a range of facilities that cater to all interests.

Recently, the team at Pure Pilates NT, hosted a magical weekend retreat that showcased diverse offerings enhanced by the spectacular backdrop of aqua seas and clear, blue skies. Over three glorious September days, guests were treated to a delightful blend of relaxation and adventure. Each morning began with invigorating Pilates sessions on the lawn, overlooking the stunning ocean views. The soothing sounds of gently breaking waves and breathtaking Dundee Beach sunsets created the perfect backdrop for these rejuvenating workouts.

After the Pilates sessions, guests chose to indulge in a variety of wellness activities. The Ocea-Eco Spa offered exquisite massage treatments, while Breath Work NT provided refreshing ice baths. For those seeking a more creative outlet, Paint & Sip sessions allowed guests to unleash their inner artist.

Of course, no retreat would be complete without delicious food. A chef was brought in to cater for the event creating a range of delicious dishes prepared in Skippers’ commercial kitchen. There was something to satisfy every palate!

As the sun began to set each evening, guests gathered on the deck to recap the day’s adventures while enjoying the breathtaking views of Dundee Beach. Sunsets from the Skippers deck never disappoint with every colour of the rainbow blending in an ever-changing colour palate and a magical atmosphere that was both calming and inspiring.

The success of this weekend retreat was due in large part to the involvement of several local NT businesses. Pure Pilates coordinated and organized the event, while Ocea-Eco Spa, Breath Work NT, and Paint & Create Darwin provided the exceptional wellness and creative experiences at Skippers at Dundee.

Thanks to the enthusiastic comments from participants about the weekend Roshelle, owner of Pure Pilates, is already talking with Skippers at Dundee about future dates to stage this retreat again. Both are excited about the format and the compatible nature of retreat activities with Skippers Beachfront Sanctuary. At the heart of the place is reconnecting with ourselves and others and creating meaningful experiences together with an attitude open to explore and enquire.

Our guests love a fishing charter with Moggy whose love for the NT is apparent and who happily shares what he’s learned, a few tall tales and plenty of stories with those he meets and greets at Skippers.

… Getting to see the look on a clients face when they tick off a bucket list fish whether it’s a Barra, Jew Fish or a Big Spanish Mackerel.

The worst part of my job is . . .

I am not sure there is a worst part but after a long day on the water cleaning the boat followed by cleaning the fish is the part of the day that seems like time is standing still.

I love the NT because . . .

I personally feel like I belong to this part of our beautiful country and the land and sea that surround it. I just have never found anywhere else in the world that has the rugged beauty and charm of the NT.

Growing up I thought I would be . . .

Well this is possibly as far removed from tourism as it gets but I wanted to be a palaeontologists or work in astronomy. I have always and still find both of those fields very intriguing.

Cotton on the Green - 13th July 2024

A sky awash with sunset, endless ocean views, crisp white tables stretching across green lawns and cool sea breezes. This was the picture-perfect vista greeting guests on arrival at Cotton on the Green, 2024. Over 200 guests, many of whom had enjoyed a festival of friendlies rugby earlier in the day, enjoyed exceptional food, entertaining recounts from Wallaby Classics, Mitch Hardy, Barry Lea and Pat Howard and the very excellent Bobby Fleet Orchestra.

A panel of cotton growers and stakeholders, led by Louis Dreyfus CEO Tony Geitz, gave valuable insights into the consistent climb of cotton in the NT. Before the evening was done one lucky punter won the swag of fantastic raffle prizes valued at over $6000.

In a tremendous day of rugby before the evening event, it was clear that having a run on the paddock with ex-Wallaby legends Mitch Hardy and Pat Howard was an exhilarating highlight. The icing on the cake was having a chat on the sidelines with Wallaby Classics, Richard Tombs and Barry Lea!

Event 1: Skippers Cotton Cup

Skippers at Dundee joins with Northern Cotton Growers to celebrate a blue-sky day of rugby (on 13 July 2024) followed by a sublime, evening event staged under starry skies with water views. Games kick off with NT and Qld over 35’s teams having a run with some mates and meeting new ones. It’s all about the spirit of participation and camaraderie.

The match highlight at day’s end will see Country Vs City in a highly competitive, preselection match for a representative NT jersey. It’s a festival of rugby with both inclusive participation and gripping competition. The perfect teaser before the starlit, waterfront dinner on the lawns of Mindil Beach Casino Resort.

Event 2: Cotton on the Green

Cotton on the Green (that evening) offers the chance to meet and greet in a relaxed setting for a social, agri-business event that recognizes the uptake of cotton growing in the Territory. Take a moment with your cohort to acknowledge this point in time, share successes and challenges, swap stories, meet a mentor or simply relax on the lawns with cool sea breezes as the sun sets across sky and water.

Typically, there’s junctures when a new entrant arrives on the agri-business scene. The point when trials take off. The ‘kaboom’ moment when the tentative starter becomes the one-to-watch. Only time will tell if that moment is now but if interest and uptake are anything to go by it’s certainly looking good for cotton in the Territory.

It’s exciting to see the progress of cotton as the newest arrival on the ag scene. There’s no doubt it’s attracting attention. Cotton on the Green celebrates the good news stories, change for the better, thinking green and the environmental stewardship around evolving farming practice. A lively discussion panel will give insights into the state of play for cotton in the Top End and further afield.

Avoiding Mosquitoes & Sandflies Bites

Don't let Mosquitoes & Sandflies get in the way of your holiday to Dundee Beach!

Skippers at Dundee offers beautiful beachfront accommodation in the Northern Territory. With sweeping ocean views and breezes, it’s the perfect place to relax and enjoy your holiday. However, with proximity to the beach and a tropical climate come mosquitoes and sandflies. While these insects are not harmful, they can be a nuisance and put a real downer on your Dundee Beach holiday.

Here are some tips on how to keep mosquitoes and sandflies from biting when your visit Dundee Beach:

Prevention is better than cure. The best way to avoid mosquito and sandfly bites is to take preventive measures including:
Burning citronella candles or mosquito coils.
Covering up with protective clothing, especially at the peak times of dawn and dusk.
Using insect repellent with DEET (15-20%). Make sure to apply the repellent to exposed skin and even lightly spray your clothing to layer the repellent effect.
Using a Thermacell. These are devices that emit repellent to ward off mosquitoes and sandflies. Popular among locals, Thermocells are very effective and a worthwhile investment. They are available from Bunnings and camping stores. It’s best to purchase additional refill packs to last your trip so that when the cartridge and repeller mats run out you have replacements.

However, thermocells should not be packed in airline luggage because of the small butane gas cartridge inside.

Be aware of peak times. Mosquitoes and sandflies are most active at dawn and dusk and during the wet season from November to April. If you are planning to be outdoors at these times, take extra precautions to avoid bites.
Check the weather forecast. Hot, humid weather and periods after rainfall when there is water lying around are times to take extra precautions. The NT government produces a ‘Biting Midge Pest Calendar’ that can be easily downloaded showing the cycle of low to very high biting peaks. Use this helpful calendar to take extra precautions during high biting periods.
Know the signs of a bite. While sandflies aren’t easily seen and have no trouble getting through flyscreen you will know if you get bitten! Some symptoms include:
Red, itchy lumps
Swelling, pain & irritation at the site of the bite.
Rash

These symptoms can be treated with an over-the-counter antihistamine cream, ointment or tablet (please seek advice before use from a health care professional). If the symptoms are severe, you should see a doctor.

By following these tips, you can minimise mosquito and sandfly bites at Skippers at Dundee. There’s nowhere quite like the Top End so don’t let a few pesky insects put you off. CATCH & RELEASE . . . for some species but not others!

With intense pressure on marine environments like Dundee Beach, it’s up to all of us to take action to preserve fisheries in the region.

Is catch and release a good option to preserve fish stocks?

It may be, depending on the species is the short answer. Some species will not survive catch and release due to ‘barotrauma’.

What is barotrauma?

This happens when a fish is hauled up from deep water. Rapid change in pressure cause gases in the fish’s body to change resulting in a range of injuries that will most likely be fatal to the fish.

Sometimes these symptoms are evident like bulging eyes, stomach pushed out through the mouth, bloating and protruding intestines. Other times internal injuries may not be visible but the fish may not survive. They may appear to swim away happily but the damage is probably already done.

Which species are affected by barotrauma?

Black jewfish, golden snapper, emperor (except for Red Emperor) cod, coral trout and many reef fish species when caught in water deeper than 10 metres.

Barramundi and salmon as well as pelagic species such as trevally, tuna, queenfish, mackerel and the like do not suffer barotrauma if handled carefully as outlined below.

What can I do?

When fishing in a depth of 10m or more, don’t target reef fish for catch and release.
Move on to a different location and target other species less affected by barotrauma. (Change locations to avoid catching juvenile or unwanted fish.)
Be aware of and respectful of possession limits.
Keep reef fish (within permitted limits) as released fish are unlikely to survive.

How to help survival of released fish:

Try to adjust tackle size to species you are targeting and keep capture time to a minimum.
Keep fish in the net in the water until you are ready for a photo. Once out of the water, release it as quickly as possible.
Use fish-friendly nets without knots to minimise injuries to fish skin and fin and slime coating.
Hold and support fish horizontally, (not vertically).
Keep it off hot boat deck and from thrashing about.
If close to shore, set fish free near bank for recovery in protection of snags and quieter water.
If hook is placed deeply, cut line close to the mouth and leave the hook in place.
Hooks without barbs reduce damage to fish and make releasing easier.
Consider depth and avoid targeting reef fish for catch and release in water deeper than 10m.

Adopting these practices gives fish the best chance of survival. We find people are interested to learn about the marine environment. Sharing and educating in simple ways about how to preserve fish stocks in our heavily frequented region just makes sense. With the high number of fishing charter operators now active in the Dundee Beach coastal and off-shore region, adopting practices for the long term will be critical to sustainability.

As an example of the many conditions at play for fish stocks to be replenished, let’s look at the barramundi life cycle. Male barra turn into females at about 5 – 6 years of age (in saltwater) and can live to at least 20 years of age. It’s these big females that produce eggs during the spawning season around October (at the beginning of the wet season). Eggs and larvae are washed into mangroves and wetlands by high tides and wet season floods.

As juvenile barra grow, some move upstream to freshwater at the end of the wet season (around April). In just 1 year barra can be between 30 – 40cm and are hungry, growing young ‘uns! So, at just 1 year these fish are a decent size but need to live until 5 – 6 years to undergo their sex change (to a female). These females then need sexually mature males (3-4 yrs) for the spawning season life cycle that replenishes numbers.

It’s a delicate balance with many living things, human activities and seasonal conditions in play. Sustainability is in our hands. It is one we must surely be mindful of as caretakers.

What is there to do at Dundee Beach?

Dundee Beach is famous for fishing – you can hire a boat, bring a boat, cast off from the rocks or go out on a fishing charter. There’s plenty to do if you’re not into fishing though. You can:

· take beach walks and enjoy lunch with sea views at the local Lodge of Dundee Beach,

· explore the hikes and cascading waterfalls at Litchfield National Park,

· head out on our Nature Cruise, try your hand at crabbing and fishing and see the wildlife,

· take to the skies and soar over pristine coastlines and azure oceans with a 6min, 15min or 30min helicopter flight from Skippers at Dundee,

· explore the local bush and beach trails if you have a 4WD,

· visit the Territory Wildlife Park just 45 minutes’ drive from Skippers at Dundee,

· try land fishing at Barramundi Adventures at Berry Springs.

Are there crocodiles nearby?

Yes, the NT is home to the world’s largest wild crocodile population. That means you can go croc spotting and see one of nature’s most magnificent predators, up close. But don’t worry, observe all signs and follow the guidelines and you will be safe.

Can we swim at the beach?

We don’t advise it (see ‘crocodiles’ above). In fact, for your health and safety, we strongly advise against it. That’s why we put the pool in so you can enjoy a cooling swim and the view at the same time!

What should we bring with us?

Hats, sunglasses, sunscreen, insect repellent, flips flops and closed in shoes for walking plus a few light, long-sleeve, cotton shirts are recommended. The nearby local pub sells fuel, drinks, bistro and take-away meals, ice and a small range of essential grocery items from sun-up to sun-down 7 days per week.

Can we bring our pets?

Sorry, but no. This is a strictly pet-free zone. We want to protect the local wildlife—and your pets too.

Is Wi-Fi and mobile phone reception available?

Dundee Beach has coverage for Telstra providers only. Wi-Fi is available for basic internet and mobile usage. Streaming is discouraged. Plan options available to us are limited so basic internet usage is requested.

Are we allowed to light a campfire?

Lighting fires is strictly prohibited anywhere on the property. The dry season lasts several months so fire hazard is very high from May through to November generally speaking.

There's Nothing Better than Fishing Barra of Dundee Beach!

The iconic Barramundi, meaning large-scale river fish, is thrilling to catch and delicious to eat! Found in coastal waters of the Northern Territory (e.g. Dundee Beach) they live in fresh and salt water and will eat just about anything.

As the Big Wet comes to an end and water drains from the flood plains, all manner of tasty treats (prawns, fish, insects, spiders and crustaceans) wash downstream into the mouths of waiting barramundi. This festival of food together with warmer water temperatures means these opportunistic predators are more active (than during the cooler months of the dry - May to August). Known as ‘The Run-off’ this prime time is irresistible to enthusiastic anglers keen to target this great game and sports fish during fishing charters.

Well known for their tenacity when hooked, barra prefer rivers and creeks with large catchments where the water flow is slow and continuous and where they can hide near submerged logs, snags and overhanging vegetation. Curiously, barra start life as males and at about 80cm change sex to females if they are in salt-water environments. This is worthy of note for fishers who land one at this size. These big females are needed to ensure spawning. Catch and release to ensure these big females can return to shallow mudflats to spawn, thereby replenishing stock levels.

The Run-off months from February to April are busy for Dundee Beach and Skippers with groups of mates enjoying beachfront accommodation, ocean views and spectacular sunsets from the plunge pool after full day fishing charters. Some bring their own boat to Dundee Beach and others prefer to sit back and head out with our experienced guides. Dry Season Fishing at Dundee Beach (May - September)

With clear blue skies, south easterly breezes and spectacular sunsets, the ‘Dry Season’ (from May to September) is great for tidal river and sport fishing in the waters off Dundee Beach. Look out for swooping birds attracted to bait schools. Sailfish, queenfish, long tail tuna, cobia and giant and golden trevally hunt these schools of bait.

Reefs harbour popular species like black jewfish, golden and tricky snapper, red emperor and coral trout. Remember, it’s good practise to catch and release for the enjoyment of all and to allow fish stocks to rejuvenate.

Bart Beek’s Salt & Pepper Calamari

Cook this from Skippers at Dundee's commercial kitchen!

This succulent and tender way to cook fresh calamari only takes 40 seconds. Clean and score the calamari well and you’ll be rewarded with something quite special. Cook the Sichuan peppercorns in a small skillet above heat until they begin to smoke and become fragrant, then grind the peppercorns in a mortar and pestle.

Prep time: 10 minutes
Cooking time: 10 minutes for the Sichuan pepper, 40 seconds for the calamari
Serves: 4

Ingredients
2 medium calamari tubes

Flour dusting mix
1 cup plain flour
½ cup rice flour
1 tsp fine salt
1 tsp ground white pepper

Combine the above ingredients well in a bowl.

Seasoning mix
1 tsp ground roasted Sichuan pepper
1 tblsp salt flakes
1 tblsp white sugar

Combine well and place into a small dish.

How to make it …
Heat a small deepfryer or a wok, half-filled with vegetable oil, until the oil is heated to 185ºC.

Cut open the calamari tube and lay flat. Use a sharp knife to make shallow incisions into the inside of the calamari about 5mm apart - make sure that you do not cut all the way through. Then, cut the other way until you have a fine criss-cross pattern on one side.

Cut into strips that are 2cm wide and 6cm long.

Lightly dust the strips in the flour mix. Shake to remove excess flour, then carefully immerse into the hot oil. Gently move around and fry for 40 seconds.

Remove from the oil and drain on kitchen paper. Dust with the seasoning mix and serve immediately.

Another Successful Event - Skippers Cotton Cup!

Very happy to report that the Skippers Cotton Cup on 23 ^rd July 2022 was a resounding success! Under a clear, blue sky on a green field with marquee tents and banners lining the sidelines, Qld and NT teams relived their glory days and relished the mateship and spirit of the comp.

After a fine day of football, the evening festivities kicked off on the lawns of Mindil Beach Casino with sunset splashing its magnificence for our guests. Though Mick Denigan was a no-show, the live entertainment more than made up for it. David Giffin recounted stories and highlights of his international rugby career in a cracking interview, the band played favourite after favourite and the auction kept bidders on their toes and guests fascinated by the sales patter.

We are so very thankful to our event partner, Northern Cotton Growers and major sponsor Neil Mansell Transport as well as key sponsors SEM Group, Kelly Group of Companies and NT Broadacre. Best for barramundi! As monsoon rains ease barramundi swim from shrinking floodplains and channels back into swollen rivers. So too smaller bait fish and crustaceans are washed downstream toward the mouths of rivers/ creeks . . . and also the mouths of barra waiting in ambush! Mangrove habitats along the coast and in waterways like the Finniss River, where the current provides less resistance are favourite places for barramundi to hang out. This is their festival of food and there’s no better time to go after the mighty barra!

Who doesn’t love pesto on their freshly caught fish? Easy to make, this is a Skippers’ fave because it goes with just about everything.

Rocket Pesto with Fresh Fish

Ingredients

1 x 120g packet of baby rocket
small bunch basil leaves
⅓ cup toasted pine nuts
⅔ cup extra virgin olive oil
50g grated parmesan cheese, plus extra to serve
3 tbsp lemon juice and 1 teaspoon zest
3 cloves garlic, peeled and whole
Sea salt and cracked pepper to taste

Toast the garlic with the pine nuts. Then, blend all ingredients until smooth. Serve with your favourite fish and fresh salad.

We ran to the screen door, peeked cautiously out,

snuck onto the deck, then let out a shout.

Guess what had woken us up from our snooze,

But a rusty old Ute pulled by eight mighty 'roos.

The cheerful man driving was giggling with glee,

And we both knew at once who this plump bloke must be.

Now, I'm telling the truth it's all dinki-di,

Those eight kangaroos fairly soared through the sky.

Santa leaned out the window to pull at the reins,

And encouraged the 'roos, by calling their names.

'Now, Kylie! Now, Kirsty! Now, Shazza and Shane!

On Kipper! On, Skipper! On, Bazza and Wayne!

Park up on that water tank. Grab a quick drink,

I'll scoot down the gum tree. Be back in a wink!'

So up to the tank those eight kangaroos flew,

With the Ute full of toys, and Santa Claus too.

He slid down the gum tree and jumped to the ground,

Then in through the window he sprang with a bound.

He had bright sunburned cheeks and a milky white beard.

A jolly old joker was how he appeared.

He wore red stubby shorts and old thongs on his feet,

And a hat of deep crimson as shade from the heat.

His eyes - bright as opals - Oh! How they twinkled!

And, like a goanna, his skin was quite wrinkled!

His shirt was stretched over a round bulging belly

Which shook when he moved, like a plate full of jelly.

A fat stack of prezzies he flung from his back,

And he looked like a swaggie unfastening his pack.

He spoke not a word, but bent down on one knee,

To position our goodies beneath the yule tree.

Surfboard and footy-ball shapes for us two.

And for Dad, tongs to use on the new barbeque.

A mysterious package he left for our Mum,

Then he turned and he winked and he held up his thumb;

He strolled out on deck and his 'roos came on cue;

Flung his sack in the back and prepared to shoot through.

He bellowed out loud as they swooped past the gates -

MERRY CHRISTMAS to all, and

goodonya, MATES!'

Skippers at Dundee was the chosen venue for the Wedding of Al & Michelle on Saturday 7th July. A small group of 40 enjoyed the sunset wedding ceremony followed by a spit roast dinner on the deck prepared by Nat’s Kitchen Caterers in the Skippers' kitchen. As with all good weddings, there was some dancing into the evening with a great time had by all. Our heartfelt congratulations to Michelle and Al whose wedding is the first to be celebrated at our beachfront sanctuary!

Darren and his girlfriend Amilia were pondering ideas on how to celebrate Daz's 30th birthday. Darren remembered a place at Dundee Beach that he had visited during its construction as a part of his work. After a quick google search, they were excited to find the place he was talking about and rang Owie at Skippers. Amilia organised a couple of close friends and ducked out to to Dundee Beach for Daz's birthday weekend. The guys and girls enjoyed time in the pool, a game of cricket and volleyball. Happy birthday Daz!

AFL Grand Final at 'The Dee'...

A few local tradies and their wives brought a little bit of Northern Territory influence to the AFL grand final. Skippers was decorated in the colours of the Tigers and the Crows and with plenty of space in the common room to create their own version of the MCG - aptly named ‘The Dee’. After the game they settled in to hot dogs and live music courtesy of Owie – just the way to do things at Skippers! Travis commented, “. . . thanks for having us and we hope you enjoyed it just as much as we did. 5 stars from me cheers. Thanks Owie for everything mate. Book us in for next year!”

A luau at Skippers

Kelly, Ed and a couple of friends brought a luau to Dundee Beach on Saturday night to celebrate a birthday. Here is what Kelly had to say about her Skippers experience...

"We were looking for accommodation at Dundee for a small group of friends for a weekend of relaxation, good food, swimming and fishing and we found it at Skippers! Owie has a fantastic property (ensuited rooms, the comfiest beds and air-con) and a huge common area. The large deck had plenty of space with a huge outdoor table setting and there was even a commercial kitchen fully equipped for us to cook up a feast! With thanks to his fishing tips and the property being located so close to the boat ramp, freshly caught barramundi was on the menu.

Owie made everyone feel very welcome and at home. He helped us out where possible and always checked in with us to ensure everything was going smoothly. He even treated us to a couple of songs on the guitar! The property is amazing so I won't be staying anywhere else other than Skippers when I go to Dundee in future! Highly recommended, thank you Owie for the wonderful property and incredible service. We will be back!"

A small group of mates from a Toowoomba Rugby Club had an absolute ball over the weekend at Skippers at Dundee. While enjoying an unforgettable Top End holiday the boys had a very successful day or two on the water. Feasting on chilli mud crab and fresh snapper at dinner one night, Coach Bombay made the comment, "How good is this!" They also visited iconic Tipperary Station over the weekend to top off their trip.

Jo and a few life long friends ducked out from Darwin to Skippers at Dundee for the annual Territory Day celebrations. They spent the night relaxing and catching up in the beautiful setting of Dundee Beach. The next morning, after a night of many stories and a few songs around the campfire, Jo commented, "It's just so relaxing" and friend Jeff from Queensland agreed it was, "Bloody perfect".

There are many things to do at Dundee Beach apart from fishing, so make sure when you book your Northern Territory adventure you include Skippers at Dundee in your must see list.
